Granted, you kind of pick up on the verbal commands by just playing SB for a bit, but this is a good source if you're looking to learn it more in depth.

I found this in my unending search for a publicly hosted .pdf of "STP 17-19K1-SM" and its part II (which I can't find...is it illegal to for that to be distributed publicly?...)

No not really. You have to look for the military manuals that are for gunnery. They should be in the heavy BCT, and cavalry gunner manuals. You might also find them in maneuver tactics manuals as well.
You have the alert like (gunner),
type of round and weapons system (sabot),
type of target (tank) if multiple targets to fire at (two tanks left tank first) etc.,
gunner identifies target (identified),
loader arms the gun and says (up) for arm level is up,
commander authorizes release of gun (fire),
gunner announces to crew he is going to fire (on the way), pulls trigger,
then you need to sense the round target/doubtful right or left/short/over/lost etc.,
and close or continue the engagement with target or re-engage till there is a target and is destroyed then cease fire.

There is more to them for different types of engagements, who is firing, but that is the basics. The very least you have to have is alert, release authorization, and ending. (from my position, on the way, cease fire.) If I am remembering correctly without looking it up.
