So is there any way of looking at the log that tacview uses to pull into out of DCS? like a start-up option or something?

The .acmi file itself can be opened as a .txt file (usually in a zip archive) and you can see lots of info.

Not sure if this is what you are looking for ... is there any particular information you are interested in?
